Asparagus is one of my favorite vegetables, and with just a little love asparagus goes from good to spectacular. Dijon mustard always adds a gourmet touch while a quick roast in the oven at high heat intensifies all the flavors. Dijon Mustard Roasted Asparagus is a quick and easy vegetable side dish that will make a perfect addition to any meal.

  • Asparagus takes 3 years from initial seed to be able to harvest, after that asparagus can be harvested for up to 20 years!

  • Asparagus is a nutritional powerhouse. With about 40 calories per cup along with being high in fiber, folate and vitamins A, C, E and K
  • White and green asparagus come from the same plant. Asparagus gets it’s green color from chlorophyl once it’s exposed to the sun, to keep asparagus white the plant is kept in the dark until it matures.

  • Asparagus
  • Dijon mustard
  • Olive Oil
  • Salt
  • Pepper

How to Make Dijon Mustard Roasted Asparagus

Dijon Mustard Roasted Asparagus

Preheat oven to 450 degrees. Rinse and trim the ends of the asparagus and place on the baking sheet. Stir together dijon mustard, olive oil, salt and pepper until fully combined. Brush the dijon mixture over the asparagus. Bake the asparagus for 12 minutes. Serve as desired.
