Fresh strawberries are at their best showcased in simple desserts and things donโt get much simpler than a galette. Take lightly sweetened strawberries, wrap them up in an easy buttery pastry crust and pop the whole thing in the oven and youโve got a strawberry desert that is far more than the sum of its parts. Relaxed yet refined, this easy Strawberry Galette recipe is everything a summer dessert should be.

This strawberry galette is one of my favorite desserts to make when fresh local strawberries are at their peak. It’s a simple rustic dessert that never fails to impress. Perfectly imperfect, it doesn’t matter if your galette isn’t exactly round or if a little of the filling bubbles up and over the crust. All of this is part of the galette’s charm.

What is a galette?
By French terms a galette is any flat round pastry or cake. Today, the term galette usually refers to a rustic free-form tart using a single pastry crust where the edges are folded up and over to form a crust. Galettes can be savory or sweet and the crust can be made from a number of different flours.
Ingredients
- all purpose flour
- unsalted butter
- kosher salt
- ice cold water
- strawberries, sliced
- granualted sugar
- cornstarch
- lemon zest
- egg
How to Make a Strawberry Galette

This galette starts with making a simple all butter pie crust inspired by the one from Tartine, but you can also use a good quality store-bought crust as well. For the pie dough using the food processor add the flour, salt and butter and then pulse several times until the flour mixture is crumbly and resembles coarse sand. Add water 1 tbsp at a time pulsing in between each addition until the dough comes together and forms a ball (you may need a little less water depending on your local humidity levels). If you choose not to use a food processor you can make the dough in a large mixing bowl using your hands to mix the flour and butter mixture until coarse and crumbly, and then use a fork to gently form the dough after each addition of the water. Take care not to overwork the dough. Pat the dough ball into a flat disk, wrap in plastic wrap and chill in the fridge for at least 1 hour or up to overnight.


Preheat the oven to 375 degrees. Toss the strawberries together with tbsp of sugar, cornstarch and lemon zest and set aside. Place the dough on a lightly floured surface and using a rolling pin roll it out into a circle roughly 13-14 inches in diameter ( I like to roll out my pie dough onto this baking mat for accurate measurements). Transfer the dough to a baking sheet lined with parchment paper.
Place the strawberries in the center of the dough leaving a two inch border. Fold the border up and over the strawberries forming a very loose crimp. Brush the dough with an egg wash (made by whisking 1 large egg and 1 tbsp of water with a fork) and sprinkle with remaining sugar. Bake the galette at 375 degrees for 35-40 minutes or until golden brown. Allow to cool for 10 minutes before slicing.

Pie Crust Tips
- Avoid overworking the dough. Overworking dough can lead to gluten formation and make your pastry crust tough.
- Ensure the butter and water is very cold. Pockets of cold butter will help create flaky layers in your pastry crust.

- 1/2 tsp kosher or sea salt
- 1/3 cup ice cold water
- 4 cups strawberries, sliced
- 4 tbsp sugar, divided
- 2 tbsp cornstarch
- 1 tbsp lemon zest
- 1 large egg
Instructions
