Tasty and irresistible, chicken wings are one of the most popular foods at any party. Wings are super easy to make at home and get better if cooked in your smoker. Crispy, smoky and delicious on their own or glazed in your favorite sauce this simple recipe for Smoked Chicken Wings will make some of the best wings you’ve ever had.

Chicken wings are popular in my house come football season. While I love oven baked chicken wings the flavor from making chicken wings in my pellet smoker is unmatched.
Ingredients for Smoked Chicken Wings
- Chicken wings (drums and flats)
- Baking powder
- Kosher salt
Sauces for Smoked Chicken Wings
While these smoked chicken wings are great straight from the smoker they get even better when paired with your favorite sauce. You can easily make a classic buffalo sauce by bringing 1 cup of hot sauce and 2 tablespoons of butter to a simmer over medium heat. I also recommend tossing these wings with your favorite barbecue sauce ( or you could try my homemade Coffee BBQ Sauce or Carolina Gold BBQ Sauce) or the glaze from my Tequila Lime Chicken Wings.
How to Make Smoked Chicken Wings
Making chicken wings in the smoker is quite simple with a great flavor payoff. First make sure you pat your chicken wings dry with a paper towel; if you brined your chicken wings ( and I recommend you take this easy simple step for maximal flavor in your wings with my Easy Chicken Wing Brine Recipe ) you don’t need to rinse the brine, just pat the wings dry. Toss the wings with a mixture of baking powder (DO NOT use baking soda!) and salt making sure they are thoroughly coated.
Preheat your smoker ( I recommend the Green Mountain Grill Daniel Boone or Trek model) to 250 degrees Fahrenheit according to manufacturer’s directions.
Place the chicken wings into the smoker, directly on the grates. Close the lid and smoke the chicken wings for 30 minutes. Increase the heat of the smoker to 425 degrees F. Continue to cook the chicken wings for another 30 minutes or until the internal temperature reaches 170 degrees F. Remove from the grill and serve as desired. Serve as is or toss the wings in your favorite sauce.

- 1 tbsp baking powder
- 1/2 tsp kosher salt
Instructions
- Preheat your smoker to 250 degrees Fahrenheit according to manufacturer's directions.
- Pat chicken wings dry using a paper towel. Mix together baking powder and salt. In a large bowl toss together chicken wings and baking powder mixture until thoroughly coated.
- Place the chicken wings into the smoker, directly on the grates. Close the lid and smoke the chicken wings for 30 minutes.
- Increase the heat of the smoker to 425 degrees F. Continue to cook the chicken wings for another 30 minutes or until the internal temperature reaches 170 degrees F.
- Remove from the grill and serve as desired. Serve as is or toss the wings in your favorite sauce.
