Sheet Pan Steak Fajitas are the ultimate weeknight dinner! Made in just one pan these fajitas are made with thinly sliced steak and vegetables tossed in a homemade fajita seasoning, then roasted in the oven. Sheet pan fajitas are one of the best dinner recipes for those busy weeknights! 20 minutes to prepare, simple ingredients and one pan means minimal clean up. Easy to prepare and highly versatile these steak fajitas are great for meal prep. In addition to classic fajitas you could serve then over rice, cauliflower rice or quinoa for a delicious protein bowl, serve over lettuce for a fajita salad or use romaine or butter lettuce for a fajita lettuce wrap. Serve with your favorite Mexican sides like rice (my Mexican Green Rice is delicious) and beans (pinto beans, black beans, refried beans or Charro Beans) and Mexican Street Corn Salad.
For a traditional fajita dinner I love to serve these family-style with all of the fixings so everyone can make them how they like. For a make-your-own fajita bar I recommend the following:
- flour tortillas or corn tortillas (to make this gluten free use corn tortillas or your favorite gluten free tortilla brand)
- Fresh salsa (use my roasted tomato and green onion salsa or roasted poblano salsa, or your favorite store-bought salsa)
- Cheese (cheddar, monterrey jack or cotija)
- Shredded lettuce
- Guacamole
- Sour cream
- Pickled onions
- Fresh cilantro
- Avocado Crema or Chipotle Crema

- Smoked paprika
- Ground cumin
- Garlic powder
- Onion Powder

Cooking Tips
- Aside from skirt steak you can also use flank steak, flap steak or sirloin
- Ensure you slice your steak against the grain in thin strips for the best texture and ease of cooking
- You can use avocado oil or vegetable oil in place of the of the vegetable oil
- Fee free to use your favorite store-bought fajita or taco seasoning in place of my homemade fajita seasoning in the recipe
- In the mood for chicken? You can substitute thinly sliced chicken breast or chicken thighs for chicken fajitas
- While preppers and onions are classic feel free to substitute or add your favorite veggies including mushrooms or zucchini.
- To get that signature char of restaurant fajitas you can broil your fajitas on high for 8-10 minutes in place of baking them

How to Make Sheet Pan Steak Fajitas
These beef fajitas are incredibly easy to make. Preheat your oven to 400 degrees F and line a sheet pan with parchment paper or aluminum foil. Place the sliced steak, bell peppers and onions on the sheet pan in a single layer
In a small bowl whisk together the smoked paprika, ground cumin, onion powder, garlic powder, salt and pepper.Sprinkle the spice mixture generously over the steak and vegetables followed by the olive oil. Using your hands or tongs toss together ensuring everything is evenly coated with the spice mixture.


Place the pan in the oven and bake for 12-15 minutes ensuring the steak has reached an internal temperature of 145 degrees F and the vegetables have softened. Squeeze fresh lime juice over the steak and vegetables and serve as desired.
Storage and Reheating
Store leftovers in an airtight container for up to 4 days. To freeze allow the fajitas to cool to room temperature and store in a freezer-safe storage bag, freeze for up to 3 months. Reheat leftover steak fajitas in a large skillet on the stovetop over medium heat until warmed through, or microwave covered in 30 second intervals until just heated.

- 1.5 pounds Skirt steak thinly sliced against the grain
- 3 large Bell peppers seeded and thinly sliced
- 1 large Onion thinly sliced
- 1 tablespoon Olive oil
- 2 teaspoons Smoked paprika
