Equipment

  • 1 large sheet pan
  • Parchment Paper or Aluminum Foil

Ingredients
  

  • 1.5 pounds Skirt steak thinly sliced against the grain
  • 3 large Bell peppers seeded and thinly sliced
  • 1 large Onion thinly sliced
  • 1 tablespoon Olive oil
  • 2 teaspoons Smoked paprika
  • 2 teaspoons Ground cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Kosher salt

Instructions
 

  • Preheat your oven to 400 degrees F and line a sheet pan with parchment paper or aluminum foil.
  • Place the sliced steak, bell peppers and onions on the sheet pan in a single layer
  • In a small bowl whisk together the smoked paprika, ground cumin, onion powder, garlic powder, salt and pepper.
  • Sprinkle the spice mixture generously over the steak and vegetables followed by the olive oil. Using your hands or tongs toss together ensuring everything is evenly coated with the spice mixture
  • Place the pan in the oven and bake for 12-15 minutes ensuring the steak has reached an internal temperature of 145 degrees F and the vegetables have softened.
  • Squeeze fresh lime juice over the steak and vegetables and serve as desired.
