Originating in the province of Cadiz the rebujito is simple Spanish cocktail popular throughout southern Spain. Popular duing the spring and summer fiesta del pueblos, or village festivals, the rebujito is a lower alcohol cocktail perfect for endless celebration. At it’s heart the rebujito is a mix of a lighter dry sherry (such as a fino or manzanilla) and bubbly lemon lime soda along with fresh mint though you can replace the soda with lemon juice, simple syrup and soda water if you desire a less sweet cocktail.
Ingredients for Rebujito
- Dry Sherry, Fino or Manzanilla
- lemon lime soda
- lemon slice
- fresh mint
- ice

- 1-2 sprigs fresh mint
- ice
How to Make a Rebujito
In a wine or highball glass filled with ice add sherry and mint. Top with lemon lime soda and lemon slice. Garnish with an additional sprig of mint if desired. Alternatively if you wish to have a drier cocktail add sherry and mint to a glass filled with ice along with 1 oz lemon juice and 1/2 oz simple syrup, stir gently to combine and top with soda water.

- 6 oz lemon lime soda
- 1 lemon slice
- 1-2 sprigs fresh mint
- ice
