One Pot Pasta Primavera with Shrimp

One pot meals are a lifesaver in any busy kitchen, and even better when it makes a delicious dinner that looks like it came from a professional chef. Pasta, fresh spring vegetables and buttery shrimp come together to make a dinner that everyone is sure to love. Pasta Primavera with Shrimp is easy, elegant and comes together in under 30 minutes.

Primavera means spring in Italian and calls to mind all things fresh, light and green. A classic warm weather dish filled with seasonal veggies pasta primavera is made even better with the addition of succulent shrimp.

Ingredients for Pasta Primavera with Shrimp

Pasta Primavera with Shrimp
  • pasta, such as penne or fusilli
  • chicken stock
  • garlic 
  • kosher salt
  • black pepper
  • asparagus
  • frozen peas
  • shrimp, peeled and deveined
  • shredded Parmesan

How to Make One Pot Pasta Primavera with Shrimp

The trick to making this a one pot dish is to add just enough liquid while cooking the pasta that most of it get absorbed leaving just a bit of starchy liquid to combine with the parmesan to make a luscious sauce.

Add the pasta, 3.5 cups of broth (if the pasta dries out during cooking add up to another 1/2 cup of broth or water), garlic, sat and pepper to a large pot and bring to a boil. Set a timer for 11 minutes, or per pasta package directions. Once there is 5 minutes left on the timer add in asparagus, then once once there is 3 minutes remaining add in the shrimp and peas. Once the pasta is done cooking remove the pot from the heat and stir in parmesan. Serve as desired.

Ingredients
  

  • 16 oz pasta, such as penne or fusilli
  • 3.5 -4 cups chicken stock
  • 2 cloves garlic minced
  • 2 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 pound fresh asparagus, chopped
  • 1 cup frozen peas
  • 1 pound shrimp, peeled and deveined
  • 1 cup shredded Parmesan

Instructions
 

  • Add pasta, 3.5 cups broth (if the pasta dries out during cooking add up to another 1/2 cup of broth or water), garlic, sat and pepper to a large pot and bring to a boil. Set a timer for 11 minutes, or per pasta package directions.

Notes

You can halve this recipe for a smaller portion however leftovers reheat wonderfully.
