Queso is always a go to appetizer for me and making it from scratch is much easier than you think. After cooking up some delicious chorizo ( a soft Mexican sausage loaded with paprika and garlic) and sauteeing up some veggies a mix of flour, milk, beer and two kinds of cheese (Cheddar and Monterey Jack, though you can also use pepper jack for a bit of extra heat) make for a creamy sauce filled with flavor.
