What is Simple Syrup?
Simple syrup is a combination of sugar dissolved in water. Traditional simple syrup is an equal 1:1 ratio of sugar and water. Thin simple syrup is less sweet with a less viscous texture with a 2:1 ratio of water to sugar. Thick simple syrup is 2 parts sugar to 1 part water with a sweeter flavor. You can use a variety of sugars to change the dynamics of your simple syrup. Standard granulated white sugar makes a good standard simple syrup but you can also use demerara, honey(like I’ve done here) or coconut sugar depending on your preferences.
How to Use Honey Ginger Simple Syrup
You can use honey ginger simple syrup anywhere you’d like to add a bit of floral sweetness with a kick . Add this simple syrup to your favorite drinks like hot or iced tea or lemonade .You can also use honey ginger simple syrup to make a number of delicious cocktails (Specifically the Penicillin cocktail, a new modern classic). I also like to drizzle honey ginger syrup over cake or use it to poach pears or peaches.
How to Make Honey Ginger Simple Syrup
Honey Ginger Simple Syrup is quite easy to make. In a medium saucepan combine honey, water and ginger and bring to a boil ensuring the honey fully dissolves. Remove the pan from the heat allowing the simple syrup to steep for 30 minutes (or up to a day if you like a stronger ginger flavor). Strain out the ginger and transfer the simple syrup to a clean glass jar (I absolutely love these adorable tulip jars!). This simple syrup can be stored at room temperature for 1 week or in the refrigerator for a month.

I LOVE this ginger & honey syrup! I used to make it with sugar but its SO much healthier with honey! I keep it in the fridge and I put a small amount of the syrup (maybe a half inch or so) into a tall glass and fill with ice & water. Its almost like ginger ale! its my favorite drink especially during the summer. I also steep it overnight since I love a stronger ginger flavor!

I make this regularly but I let the water cool down to about 100° before adding the honey. Otherwise you kill the beneficials in the honey and it does nothing but act as a sweetener. Why not have a healthy sweetener?

I tried this and it was really good. Even just a spoonful eases discomfort for my random dry/sore throats. I am excited to see how is works with sore throat caused by cold, flu or covid this year.
