What is Quiche?
At it’s heart quiche is a custard, a mixture of eggs and milk baked into a pastry crust (it can also be made crust free). This base has endless variations that you can customize with different veggies, herbs, cheeses as well as bacon, ham or sausage. Ingredients for Ham and Asparagus Quiche
- pie crust (refrigerated or homemade)
- olive oil
- leek
- asparagus
- diced ham
- large eggs
- milk
- kosher salt
- ground black pepper
- shredded Gruyere cheese
How to Make Ham and Asparagus Quiche
Preheat oven to 400 degrees. Prepare refrigerated pie crust per box instructions, if using homemade pie crust roll onto tart pan or pie dish and fill with pie weights or dried beans. Bake for 10 minutes and remove from oven. Heat olive oil in a large skillet over medium high heat and saute sliced leeks and asparagus for 4-5 minutes. Remove from heat and set aside. In a large bowl whisk together eggs, milk, salt and pepper. Add the asparagus and leeks to the pie or tart pan along with the diced ham. Pour the egg mixture over the ham and vegetables and sprinkle shredded Gruyere cheese over the top.Place quiche in the oven and bake for 40 minutes. The crust should be puffy and golden when done. Let the quiche cool for 15 minutes, cut into 8 slices and serve.
