Pair that skirt steak with the freshness of avocado and you’ve got an easy, yet impressive dinner that’s ready in less than 20 minutes. My recipe for Grilled Skirt Steak with Avocado Lime Crema has become one of my favorite summer dinners and I’m sure you’ll love it just as much.

What is Skirt Steak?
Skirt steak is a long thin cut from the diaphragm of the cow. Skirt steak has visible grain loaded with beefy flavor that’s best cooked quickly over high heat. The grain runs across the width of the skirt steak, to serve skirt steak you want to cut against the grain as shown here.
How to Make Grilled Skirt Steak with Avocado Lime Crema
With it’s intensely beefy flavor skirt steak needs very little to be great. To prepare the skirt steak you want to pat both sides dry with a paper towel and season generously with salt and pepper. Over high heat on a grill (or grill pan) cook the skirt steak for 4-5 minutes on each side for medium doneness. Transfer the skirt steak to a cutting board and allow to rest for 5-10 minutes before slicing against the grain on a bias.
While the skirt steak is resting prepare the avocado crema. In a food processor add in avocados, sour cream ( you can also use Greek yogurt in avocado crema if that’s what you have on hand), cilantro (no need to chop, you can even throw in the stems as they have tons of flavor), lime juice, garlic, salt and pepper. Blend everything together until your crema is smooth and creamy. Drizzle over the skirt steak and enjoy!

Grilled Skirt Steak with Avocado Lime Crema
Equipment
- Grill or grill pan
Ingredients
For the skirt steak
- 1 pound skirt steak
- 1/2 tsp kosher or sea salt
- 1/2 tsp black pepper
For the Avocado Lime Crema
- 2 avocados skins and pits removed
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup fresh cilantro
- 2 cloves garlic
- 2 tbsp lime juice
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
For the skirt steak
- Preheat grill or grill pan to high heat.
- Pat skirt steak dry with paper towels. Season well with salt and pepper on both sides.
- Cook skirt steak over high heat for 4-5 minutes on each side. Transfer to a cutting board and allow to rest for 5-10 minutes. Slice against the grain on a bias.
For the avocado lime crema
- Place avocado, sour cream, cilantro, garlic, lime juice, salt and pepper into a food processor and blend until smooth.
- Drizzle over sliced skirt steak.
