Ingredients
  

For the skirt steak

  • 1 pound skirt steak
  • 1/2 tsp kosher or sea salt
  • 1/2 tsp black pepper

For the Avocado Lime Crema

  • 2 avocados skins and pits removed
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup fresh cilantro
  • 2 cloves garlic
  • 2 tbsp lime juice
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

For the skirt steak

  • Preheat grill or grill pan to high heat.
  • Pat skirt steak dry with paper towels. Season well with salt and pepper on both sides.
  • Cook skirt steak over high heat for 4-5 minutes on each side. Transfer to a cutting board and allow to rest for 5-10 minutes. Slice against the grain on a bias.

For the avocado lime crema

  • Place avocado, sour cream, cilantro, garlic, lime juice, salt and pepper into a food processor and blend until smooth.
  • Drizzle over sliced skirt steak.
