What is Delicata Squash?
Delicata squash ( also known as peanut squash, sweet potato squash or Bohemian squash) is a small winter squash that’s becoming more popular. Delicata squash has an edible skin that doesn’t need to be peeled making preparation very easy. Delicata is creamy and incredibly sweet and requires little more than a little olive oil, salt and pepper to really shine. Delicious on it’s own delicata is also a great addition to any fall salad.

- Delicata Squash
- Olive oil
- Kosher salt
- Black pepper
How to Make Roasted Delicata Squash
To prepare delicata squash start by cutting off the stem and root ends (I recommend having a good quality knife like this chef’s knife) and then cutting the squash in half lengthwise. Remove the seeds using a spoon or an ice cream scoop, then slice into half moons roughly 1-1.5 inches wide.
Preheat the oven to 375 degrees. Place the squash rings on baking sheet , toss with olive oil then sprinkle with kosher salt and black pepper. Bake for 30-35 minutes or until the squash rings are soft and slightly golden. Serve as desired.

Easy Roasted Delicata Squash
Equipment
- 1 Baking Sheet
- 1 large chef's knife
Ingredients
- 2 medium delicata squash
- 1 tbsp olive oil
- kosher salt to taste
- black pepper to taste
Instructions
- Preheat oven to 375 degrees.
- Cut the delicata squash in half lengthwise and scoop out the seeds. Slice into half moons about 1-1.5 inches wide.
- Place the delicata squash slices on a baking sheet, toss with olive oil then sprinkle each side with salt and pepper.
- Bake for 30-35 minutes or until soft and slightly golden. Serve as desired.
