You know what makes banana bread even better? More bananas. This banana bread gets a double dose of bananas with the addition of slices of bananas caramelized in brown sugar and butter layered throughout a traditional banana bread. This simple, but easy step takes your banana bread from good to over the top delicious. More than a few of my friends have even declared my Caramelized Banana Bread the best they’ve ever had.

On it’s own, this banana bread batter, with both mashed bananas and Greek yogurt, is incredibly moist with a great flavor and texture. But taking a few minutes to sauté sliced bananas in a mixture of butter and brown sugar (a la Bananas Foster) and then layering the slices throughout the batter really takes things to the next level. In addition to a soft, flavorful banana bread you now also get chunks of caramelized banana sprinkled throughout for an amped up banana flavor and a nice textural contrast.
Ingredients for Caramelized Banana Bread
- Butter
- Brown Sugar
- Bananas
- Flour
- Baking Soda
- Kosher salt
- Eggs
- Greek yogurt
- Vanilla extract
How to Make Caramelized Banana Bread
Let’s start things off by making the caramelized bananas. For this part you can slice 2 bananas in anyway you wish. I personally like a mix of large chunks sliced diagonally along with 1 banana sliced in half lengthwise for a nice design on top but this will also ben equally delicious if you slice the banana in rounds. Melt your butter in a large skillet over medium heat and stir in brown sugar until combined. Add sliced banana and cook for 4 minutes, gently flip them over and cook for an additional 2 minutes. Remove the caramelized bananas from the heat and set aside while you prepare the batter.
Preheat oven to 325 degrees and prepare an 8 ½ x 4½ loaf pan with cooking spray and line with parchment paper. In a medium bowl whisk together flour, baking soda and salt; then in a large bowl whisk together mashed bananas, brown sugar, Greek yogurt, eggs, melted butter and vanilla. Stir in flour mixture until just combined.
Add 1/3 of the batter to the prepared loaf and layer with on 1/3 of the caramelized bananas. Repeat layering the remaining batter and bananas in thirds. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for at least 10 minutes before removing the banana bread from the pan and slicing.

Ingredients
For Caramelized Bananas
- 1 tbsp butter
- 2 tbsp brown sugar
- 2 medium bananas, sliced
For the Banana Bread
- 1½ cups all purpose flour
- 1 tsp baking soda
- ½ tsp kosher salt
- 2 large bananas, mashed
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup Greek yogurt
- 1/3 cup butter, melted
- 1 tsp vanilla extract
Instructions
