  • 1 8x8 inch baking dish

Ingredients
  

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground ginger
  • 1/8 tsp ground cloves
  • 1/4 tsp kosher salt
  • 1 cup pumpkin puree
  • 1 1/4 cup milk dairy or non-dairy
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 cup pecans optional

Instructions
 

  • Preheat the oven to 375℉. In a large bowl stir together the rolled oats, baking powder, cinnamon, nutmeg, ginger, cloves and salt. Add in the pumpkin puree, milk, brown sugar, eggs and vinnila and stir to combine. If using, stir in the pecans.
  • Prepare an 8x8 inch baking dish with cooking spray or olive oil. Pour the oatmeal into the baking dish and transfer to the oven. Bake for 30-35 minutes or until the top is set and golden. Let cool for 5 minutes before serving.
