Equipment

  • 1 Cocktail Shaker
  • 1 Cocktail jigger
  • 1 hawthorne strainer
  • 1 cocktail glass

Ingredients
  

  • 2 oz Aperol
  • 1 oz gin
  • 3/4 oz lemon juice
  • 1/4 oz simple syrup
  • 1 egg white
  • ice

Instructions
 

  • Add Aperol, gin, lemon juice, simple syrup and egg white to a cocktail shaker. Shake for 20-30 seconds without ice (this is known as a dry shake and forms the foamy top layer of the drink.
  • Add ice to the cocktail shaker and shake for 15 seconds or until chilled. Strain into a chilled cocktail glass with a hawthorne strainer and serve.
