No appetizer is as loved as queso dip and it only gets better when filled with spicy chorizo. Filled with chorizo, jalapeno peppers and cilantro this next level queso is perfect for game day and every day. My Loaded Chorizo Queso Dip is easy to make and and sure to be a hit at your next party.

Queso is always a go to appetizer for me and making it from scratch is much easier than you think.After cooking up some delicious chorizo ( a soft Mexican sausage loaded with paprika and garlic) and sauteeing up some veggies a mix of flour, milk, beer and two kinds of cheese (Cheddar and Monterey Jack, though you can also use pepper jack for a bit of extra heat) make for a creamy sauce filled with flavor. Ingredients for Chorizo Queso Dip

  • olive oil
  • Mexican chorizo
  • onion 
  • jalapeno peppers seeded
  • roma tomato 
  • all purpose flour
  • milk
  • Mexican lager
  • Cheddar cheese shredded
  • Montery Jack or Pepper Jack cheese
  • kosher salt 
  • ground black pepper
  • fresh cilantro 

How to Make Chorizo Queso Dip

Heat olive oil to a large skillet over medium heat. Add in the chorizo and cook for 8 minutes or until browned, breaking it up into crumbles as it cooks. Transfer the chorizo to a plate lined with a paper towel.

Add the onion and jalapeno to the skillet and cook for 3-4 minutes or until the onion is transluscent. Whisk in the flour and cook for 1 minute. Add in the milk and beer and cook for 4 minutes or until fully thickened, whisking continuously.

Reduce the heat to low and stir in the cheddar, Monterey Jack cheese, salt and pepper until the cheese has melted. Stir in half of the cooked chorizo, diced tomato and cilantro.Transfer the queso dip to a serving dish and top with remaining chorizo. Serve as desired.

Instructions
