Popular duing the spring and summer fiesta del pueblos, or village festivals, the rebujito is a lower alcohol cocktail perfect for endless celebration. At it’s heart the rebujito is a mix of a lighter dry sherry (such as a fino or manzanilla) and bubbly lemon lime soda along with fresh mint though you can replace the soda with lemon juice, simple syrup and soda water if you desire a less sweet cocktail.
