This classic Greek cucumber and tomato salad is a dish I make all summer long. Bursting with fresh vegetables and dressed with a simple vinaigrette this combination of crisp cucumbers and juicy tomatoes is light and full of Mediterrean flavor, Healthy and flavorful my Cucumber Tomato Salad with Feta is also incredibly easy to make.

Summer brings farm fresh produce and Iโ€™m always making salads full of veggies ( take a look at my Caprese Salad with Burrata and Spinach and Strawberry Salad ), but this fresh cucumber salad recipe with tomatoes is one of my favorties. Crisp cucumbers (I prefer English or Persian cucumbers as they have thinner peels which don’t need to be removed) and bright tomatoes are a natural combination, while a generous addition of fresh herbs really brighten this dish. Salty feta and an easy Greek inspired dressing bring the whole thing together. This salad is great as a light lunch, or makes a wonderful side to chicken, pork, seafood or steak. Ingredients for Cucumber Tomato Salad with Feta

  • English cucumber 
  • cherry or grape tomatoes 
  • fresh parsley 
  • fresh mint 
  • feta cheese 
  • olive oil
  • red wine vinegar
  • dried oregano
  • kosher salt
  • black pepper

Cooking Tips

  • Parsley and mint are a classic combination but you can switch up the herbs with fresh basil, fresh dill or oregano.
  • I prefer using smaller cherry tomatoes but you can also dice up a larger tomato if that’s what you have on hand.
  • This simple red wine vinaigrette can be used as a salad dressing for nearly any salad, and you can substitute white wine vinegar for the red wine vinegar if that’s what you have on hand.
  • Other delicious additions to this salad include sliced red onion, kalamata olives or ciliegine (bite-sized mozzarella balls).

How to Make Cucumber Tomato Salad with Feta

This cucumber tomato salad recipe is very easy to make and comes together in minutes. Slice the cucumbers and the tomoatoes into bite-sized pieces, and then chop up your parsley and mint. In a large bowl combine sliced cucumbers, tomatoes, parsley, mint and feta. Set aside. In a small bowl whisk together olive oil, red wine vinegar, dried oregano, salt and pepper. Pour the dressing over the salad and toss together until well combined. Serve as desired.

Storage

This salad is best served fresh but you can store it in an airtight container in the fridge for 1-2 days.

Ingredients
  

  • 1 large English cucumber sliced
  • 2 pints cherry or grape tomatoes halved
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped
  • 4 oz feta cheese crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1 tsp black pepper

Instructions
 

  • In a large bowl combine sliced cucumbers, tomatoes, parsley, mint and feta. Set aside.
  • In a small bowl whisk together olive oil, red wine vinegar, dried oregano, salt and pepper.
  • Add the dressing to the salad and toss until well combined. Serve as desired.
