Chicken thighs are one of my favorite cuts to use. Chicken thighs are flavorful, moist and budget friendly. My secret for getting crispy skin when pan roasting chicken thighs to to pat them completely dry with paper towels and salt well before searing the chicken skin side down. This results crispy skin every time.
Ingredients for Pan Roasted Chicken Thighs with Mushrooms
- bone-in, skin-on chicken thighs
- olive oil
- garlic
- mushrooms (cremini or your favorite wild mushrooms)
- dry white wine
- dijon mustard
- fresh thyme
- kosher salt
- black pepper

How to Make Pan Roasted Chicken Thighs with Mushrooms
Preheat oven to 400 degrees and heat a large cast iron pan over medium heat. Pat chicken thighs completely dry and sprinkle with kosher salt. Add chicken, skin side down, to skillet and sear for 5-6 minutes or until skin is golden. Remove the chicken thighs from the pan and set aside.
Add olive oil to the pan and saute garlic and mushrooms for 3-4 minutes (you can use commonly found mushrooms like cremini or wild mushrooms like king trumpet, morels or chanterelles). Add white wine, dijon, salt and pepper and stir to combine. Add in thyme and chicken thighs (skin side up) to the pan. Transfer the pan to the oven and roast for 20 minutes. Remove the skillet from the oven and serve as desired.

Crispy Pan Roasted Chicken Thighs with Mushrooms

- 1 tbsp olive oil
- 2 cloves garlic minced
- 8 oz mushrooms sliced
- 3/4 cup dry white wine
- 1 tbsp dijon mustard
- 2 sprigs fresh thyme
- kosher salt to taste
- black pepper to taste
