Sunny days call for a cookie that are just as bright. Buttery and delicate, sable cookies have an addictively light texture. These tender cookies are flecked with floral lavender, then topped with a sweet citrusy glaze. Light and ethereal, my Lemon Lavender Sable Cookies are the perfect cookie for spring and summer.

What are sable cookies?
Sable cookies, also known as Breton cookies or French butter cookies, are similar to shortbread cookies but not as crumbly. The higher butter content of a sable cookie results in a more delicate cookie with a melt in your mouth texture.
The signature floral scent makes lavender a popular choice for perfumes and soaps but it’s also a fantastic ingredient to use in the kitchen! Lavender is part of the mint family and closely related to sage, rosemary and thyme. When cooking or baking with lavender be sure to use culinary lavender(typically English lavender) for the best flavor. How to make lemon lavender sable cookies
Using an electric mixer cream together butter and sugar on medium speed until smooth. Add in honey, egg and vanilla and beat until smooth. Add flour, salt, lemon zest and lavender and mix on low speed until combined. Divide dough in half and form into two 9 inch logs. Wrap each log tightly in parchment paper and then roll the entire log to make it as round as possible. Chill until firm (at least 2 hours). If you want to freeze the dough wrap tightly in plastic wrap. Dough can be frozen for a month, just make sure to thaw in the fridge before baking.
To bake the cookies preheat the oven to 350 degrees. Cut the cookies into 1/2 inch slices and place on a baking sheet lined with parchment paper or a silicon baking mat. Bake for 10-12 minutes until cookies are just golden on the edges. Cool for 5 minutes on the baking sheet, transfer to a baking rack and fully cool
While the cookies are cooling make the glaze. Combine powdered sugar and lemon juice until smooth. Drizzle the glaze over each cookie and sprinkle with lavender buds.

Ingredients
For the cookies

I personally have only frozen prior to baking and then slice and bake as needed. I did a little research and french sable cookies should last in the freezer in an airtight container or ziplock bag for up to 3 months. If you try this (or the cookies) please let me know how it turns out!
