This is one of my favorite gnocchi recipes, especially since baking the gnocchi straight without boiling is so unexpected. When you roast gnocchi they become slightly crispy on the outside with a chewy interior. Roasting also gives a slight char to the broccoli (and I firmly beleive that most vegetables taste better roasted). If you love gnocchi be sure to try my One-Pot Gnocchi Bolognese as well!
For this recipe you can use pork sausage, but I often use turkey sausage or chicken sausage to make this dinner a little healthier.
This is the perfect dinner recipe for those busy weeknights. Minimal prep, your oven does all of the work and just one pan to clean up. For more sheet pan recipes check out my Sheet Pan Steak Fajitas, Sheet Pan Chicken Shawarma and for breakfast my Sheet Pan Baked Eggs.
