What is a Dutch Baby Pancake?
Contrary to it’s name a Dutch baby is actually a German baked pancake. A common theory is that the German pancake got its new name in the 1940’s from a Washington state diner that turned the word “duetsche” into “dutch” . The batter for a Dutch baby is light, eggy and similar to a popover.
How to Make a Strawberry Dutch Baby Pancake
The batter for a Dutch baby pancake couldn’t be easier to make. Blend up some eggs, milk, flour and a few other ingredients in a blender and you’ve got your batter. In a cast iron skillet melt some butter and add half of the sliced strawberries. Pour the batter over the berries, pop the pan into the oven and bake for 15-20 minutes until golden and puffy. When you remove the pan from the oven the pancake will deflate some. Top the Dutch baby with the remaining strawberries and serve with a dusting of powdered sugar, whipped cream, homemade chocolate sauce or maple syrup.

Strawberry Dutch Baby Pancake
Equipment
- Blender
- cast iron skillet
Ingredients
- 3 tbsp butter, divided
- 4 large eggs
- 1 cup milk
- 1 tbsp granulated sugar
- 1 tsp vanilla extract
- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp kosher salt
- 2 cups sliced strawberries, divided
Instructions
- Preheat oven to 400 degrees
- Melt 1 1/2 tbsp butter in the microwave (about 15-20 seconds). Add butter, eggs, milk and vanilla extract and blend until combined. Add flour, 1 tbsp sugar, 1/2 tsp cinnamon, baking powder and salt and blend until smooth.
- Melt remaining butter in a cast iron skillet over medium heat. Add 1 cup of strawberries and pour in batter.
- Transfer skillet to the oven and bake for 15-20 minutes until pancake is golden and puffy. Remove from oven and top with remaining strawberries. Cut into 4-6 slices and serve with powdered sugar, whipped cream or maple syrup.

I always wanted to try a Dutch baby, and this strawberry durch Baby recipe was my final inspiration to take a try on these! I don’t eat eggs, so this was a bit tricky to substitute – but it came out fine by using egg replacer!
