For many of us pudding is a childhood favorite. Creamy, cozy and comforting this pudding is a delicious dessert that few of us make from scratch. Far better than any boxed mix or snack cup, making homemade pudding is incredibly easy. Elevated enough for date night but easy enough for any night this Salted Caramel Pudding is the perfect end to any meal.

I’ve always though butterscotch pudding was a sleeper hit of a dessert and was the inspiration for this salted caramel pudding. Caramelized brown sugar serves as a base for a simple custard that comes together in minutes. After chilling in the fridge for several hours this dessert is ready for your favorite topping (fresh whipped cream, a drizzle of homemade chocolate sauce , shaved chocolate or crumbled cookies are all delicious options) or is perfectly delectable all on its own.
Ingredients for Salted Caramel Pudding
- brown sugar
- water
- kosher salt
- egg yolks
- cornstarch
- whole milk
- vanilla extract
- bourbon or whiskey (optional)
How to Make Salted Caramel Pudding
In a medium bowl whisk together egg yolks and cornstarch then set aside. In a saucepan whisk together brown sugar, water and salt over medium heat. Cook for 5-6 minutes or until the brown sugar mixture is bubbly and begins to smell caramelized. Slowly whisk in milk with brown sugar ( the mixture may sizzle) and bring to a boil over medium heat. Add 1/2 cup of the hot milk mixture slowly into the egg yolks while whisky continuously to ensure the eggs don’t scramble.
Turn the heat to low and add the yolk mixture to the rest of the milk, again whisking continuously. Cook for 1 minute or until the pudding begins to thicken. Remove the pan from the heat and stir in vanilla and bourbon or whiskey (if using). Divide the pudding among 6 dessert dishes or glass jars and refrigerate for at least 4 hours. Serve as desired.
