Ingredients
  

  • 3/4 cup brown sugar
  • 1/4 cup water
  • 1 tsp kosher salt
  • 3 large egg yolks
  • 1/4 cup cornstarch
  • 3 cups whole milk
  • 1 tsp vanilla extract
  • 1 tbsp bourbon or whiskey optional

Instructions
 

  • In a medium bowl whisk together egg yolks and cornstarch then set aside.
  • In a medium saucepan whisk together brown sugar, water and salt over medium heat. Cook for 5-6 minutes or until the brown sugar mixture is bubbly and begins to smell caramelized.
  • Slowly whisk in milk with brown sugar ( the mixture may sizzle) and bring to a boil over medium heat.
  • Add 1/2 cup of the hot milk mixture slowly into the egg yolks while whisky continuously to ensure the eggs don't scramble.
  • Turn the heat to low and add the yolk mixture to the rest of the milk, again whisking continuously. Cook for 1 minute or until the pudding begins to thicken. Remove the pan from the heat and stir in vanilla and bourbon or whiskey (if using).
  • Divide the pudding among 6 dessert dishes and refrigerate for at least 4 hours. Serve as desired.
