In a medium bowl whisk together egg yolks and cornstarch then set aside.
In a medium saucepan whisk together brown sugar, water and salt over medium heat. Cook for 5-6 minutes or until the brown sugar mixture is bubbly and begins to smell caramelized.
Slowly whisk in milk with brown sugar ( the mixture may sizzle) and bring to a boil over medium heat.
Add 1/2 cup of the hot milk mixture slowly into the egg yolks while whisky continuously to ensure the eggs don't scramble.
Turn the heat to low and add the yolk mixture to the rest of the milk, again whisking continuously. Cook for 1 minute or until the pudding begins to thicken. Remove the pan from the heat and stir in vanilla and bourbon or whiskey (if using).
Divide the pudding among 6 dessert dishes and refrigerate for at least 4 hours. Serve as desired.
