Who doesn’t love salsa? I don’t know about you guys, but when it comes to chips and salsa my natural “I’m full” mechanism is non existent. Sure, I’ve got plenty of jarred salsas in my pantry that are tasty but during my travels to Mexico I discovered that salsa made from scratch is on a whole other level. The variety of different salsas are endless and when you make it from scratch you can customize it just how you like it. Whether you like your salsa mild or spicy making homemade salsa is super easy and my roasted tomato and green onion salsa is recipe I’ll always have on repeat.

This recipe is super simple with only five ingredients. Tomatoes, green onions ( I prefer the more subtle flavor green onions give vs white onions), jalapenos, cilantro and salt; nothing more, nothing less. This salsa is on the mild to medium side, if you want to spice things up you can include some of the seeds from the jalapenos for some heat.
I started out by roasting all the veggies under the broiler. This develops a nice toasty char that lends a nice depth of flavor to this salsa.
After roasting everything goes into the blender and creates more of pureed salsa instead of a chunkier salsa. I like this style of salsa for drizzling over tacos, steaks, grilled chicken or eggs buts its also perfect as a dip for homemade tortilla chips.
For the cilantro I like to blend half of it into the salsa and stir the rest in. This gives the salsa a good cilantro flavor in each bite.

Roasted Tomato and Green Onion Salsa
Equipment
- Sheet pan
- Blender
Ingredients
- 6 roma tomatoes
- 3 large green onions
- 3 jalapeno peppers seeded
- 1 tsp salt
- 1/2 cup cilantro
Instructions
- Preheat broiler on high.
- Place tomatoes, green onion and jalapenos on the baking sheet. Broil for 5-10 minutes until the vegetables are charred. Make sure the oven door is open in order to keep an eye on the vegetables while they roast.
- Place all the vegetables, 1/4 cup of cilantro and salt into the blender. Blend on medium high.
- Place salsa into a container and stir in remaining cilantro.

Delish! I looked for this recipe because I grew green onions in my garden and I have way too many! I left some of the jalapeno seeds and whoa, it’s got some nice kick! My blender mushed it up too much and made it a brown’ish orange color, but it still tastes great! Running to the store now for some tortilla chips!
