Roasted Brussels Sprouts with Bacon is an easy side dish for weeknight dinners, Sunday suppers, Thanksgiving, and Christmas. The combination of crispy bacon and toasty Brussels sprouts come together to make an easy side dish for weeknight dinners, Sunday suppers, Thanksgiving, or any holiday meal.

Roasted Brussels sprouts are one of my favorite vegetables. Roasting them at high heat brings out the natural sweetness of the Brussels sprouts while creating those crispy edges, while salty bacon adds a smoky crunch that’s irresistable.

Using only one baking sheet these crispy Brussels sprouts are incredibly easy to make. While it’s tempting to try to roast the bacon and the brussels together I found that cooking them separately in a hot oven ensures that both the bacon and Brussels sprouts get nice and crispy.

Cooking Tips and Variations

  • Don’t overcrowd the pan: Spread everything into a single layer with a little space between the Brussels sprouts. Crowding can cause them to steam instead of roast.
  • Roast the bacon and Brussels sprouts separately: it may be tempting to roast everything together at the same time, but cooking the bacon and Brussels sprouts separately ensures they both crisp up nicely.
  • Use thick-cut bacon: It gives the dish plenty of smoky flavor and stays meaty and crisp after roasting.
  • Add a little sweetness: Drizzle the finished Brussels sprouts with maple syrup, honey or balsamic glaze for a sweet and savory combination.

How to Make Roasted Brussels Sprouts with Bacon

Preheat the oven to 400 degrees F and line a sheet pan with aluminum foil. Place the strips of bacon on the prepared sheet pan and bake for 15 minutes or until crispy. Transfer the cooked bacon to a plate lined with paper towels to drain.

While the bacon is cooking prepare the brussels sprouts. Cut the brussels sprouts in half and place in a large bowl. Drizzle in the olive oil and add in the salt and pepper. Toss until well combined. Transfer the Brussels sprouts to the same sheet pan you used for the bacon and spread into an even layer.

Roast the brussels sprouts for 25 minutes or until the edges are crispy then transfer the brussels spouts to a serving dish. Crumble the bacon and sprinkle over the brussels sprouts. Top with grated parmesan and serve as desired.

Storage and Reheating

Store leftover roasted Brussels sprouts with bacon in an airtight container in the refrigerator for up to 4 days.

For the best texture, reheat them in a 400 degree F oven or air fryer until hot and crispy, about 5 to 10 minutes. Reheating in the microwave is fine, but the Brussels sprouts and bacon won’t be as crisp.

  • 2 pounds brussels sprout
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup parmesan cheese grated

Instructions
 

  • Preheat the oven to 400 degrees F and line a sheet pan with aluminum foil.
