Roasted Brussels Sprouts with Bacon

Ingredients
  

  • 4 slices bacon
  • 2 pounds brussels sprout
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup parmesan cheese grated

Instructions
 

  • Preheat the oven to 400 degrees F and line a sheet pan with aluminum foil.
  • Place the strips of bacon on the prepared sheet pan and bake for 15 minutes or until crispy. Transfer the cooked bacon to a plate lined with paper towels.
  • While the bacon is cooking prepare the brussels sprouts. Cut the brussels sprouts in half and place in a large bowl. Drizzle in the olive oil and add in the salt and pepper. Toss until well combined.
  • Transfer the Brussels sprouts to the same sheet pan you used for the bacon and spread into an even layer.
  • Roast the brussels sprouts for 25 minutes or until the edges are crispy.
  • Transfer the brussels spouts to a serving dish. Crumble the bacon and sprinkle over the brussels sprouts. Top with grated parmesan and serve as desired.
