You know it’s autumn when everyone is making all the pumpkin things. Pumpkin pies, pumpkin cakes, pumpkin spice lattes; we are all pumpkin crazy and I’m here for it. I can’t go through pumpkin season without making some delightful fall goodies. These pumpkin cookies with white chocolate and pecans are full of warm spices and are sure to become your new favorite fall treat.
When it’s boots and scarf weather there’s nothing like warm cookies straight from the oven. And if these cookies are filled with pumpkin, spice, and everything nice? Add in a drizzle of creamy white chocolate and a sprinkle of toasty pecans and these cookies are definitely next level.
How to Make Pumpkin Cookies
These cookies follow the standard cookie formula of mixing all the dry ingredients together, combining sugar with the wet ingredients along with the pumpkin. These two bowls then get mixed together before being spooned ( a medium sized cookie scoop works well) onto a baking sheet (parchment paper or a silicon baking mat will make your life much easier here). A quick 15 minute bake later your kitchen will be filled with the fabulous smell of pumpkin spice.
Soft, pumpkiny and spicy these cookies are great as is but with a few extra things they become divine. Melted white chocolate (combined with a bit of coconut oil for a smoother consistency) is drizzled Jackson Pollock style for a sweet, crisp shell that contrasts perfectly with the soft, cakey pumpkin cookie. Top all of this with crunchy pecans and you’ve got a cookie that’s over the top good.

Pumpkin Cookies with White Chocolate and Pecans
Equipment
- Stand mixer or electric mixer
- Baking Sheet
Ingredients
- 2 1/2 cups all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon or replace 5 spices with 1 tbsp pumpkin pie spice
- 1/4 tsp allspice
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp ginger
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 1/4 cup pumpkin puree
- 1 large egg
- 1 tsp vanilla extract
- 1 cup white chocolate chips
- 1 tbsp coconut oil or vegetable oil
- 1/2 cup chopped pecans
Instructions
- Preheat oven to 350 degrees. In a large bowl whisk together flour, baking powder, baking soda, spices and salt. In the bowl of a stand mixer with the paddle attachment (or a large bowl with an electric mixer) beat together butter and sugar until well combined, about 2 minutes. Add egg, vanilla and pumpkin puree ( the mixture will look grainy at this point). In 3-4 batches add in flour mixture until combined.
- Using a medium cookie dough scoop or rounded tablespoonfuls transfer dough to a cookie sheet lined with parchment paper or a silicon baking mat. Moisten your fingers with fresh, cool water and gently flatten the tops of the cookies. Bake for 15 minutes and let cool on the baking sheet.
- While cookies are cooling melt together white chocolate and oil, using a double boiler or a microwave. If using a microwave melt chocolate in 30 second increments keeping a close watch. Drizzle or spoon white chocolate over the cookies and sprinkle with pecans.

I made a double batch of these this weekend, and they did not disappoint- perfect combination of ingredients- pumpkin and spice, not too sweet. Paired with a cup of chai tea, all is right in this season of Fall! I was not classy…added a cup+ of white chocolate chips and chopped pecans into the batter, rather than drizzling on top. They were a hit with everyone in the house and the work fam!
