Sweet, peak season peaches are the essence of summer. A sun-ripened peach eaten fresh is pretty perfect on it’s own and need little to become an amazing dessert. If you ask me summer desserts don’t get much better than luscious peaches topped with a golden streusel flecked with buttery pecans. This Peach Crisp with Pecan Streusel may just become your favorite summer dessert.

Crisps are one of my favorite ways to use fresh fruit. Perfectly ripe fruit, baked until thick and bubbly, then topped with a crispy streusel reminiscent of a good oatmeal cookie is sure to be a hit at any summer party. This peach crisp is delicious warm from the oven or even better topped with vanilla ice cream. (Check out my Apple Blackberry Crumble and Peach Clafouti for other great fruit desserts!).
Ingredients for Peach Crisp
- large fresh peaches
- white sugar
- cornstarch
- lemon juice
- vanilla extract
For the Pecan Streusel
- rolled oats
- brown sugar
- pecans
- all purpose flour
- cinnamon
- kosher salt
- unsalted butter
How to Peel Peaches
To easily peel peaches start by scoring the skin once around each peach. Place the peaches in a pot of boiling water, 2-3 at a time, for 30 seconds. Transfer to peaches to an ice bath and allow to cool for at least 2-3 minutes. Remove the peaches from the water and the skins should easily slip off.
How to Make Peach Crisp
After you’ve peeled and sliced your peaches preheat your oven to 400 degrees. Toss the peaches with white sugar and set aside for 10 minutes to allow the peaches to release some of their juice (I find taking this step allows the juice the bind better with cornstarch so you don’t end up with a soggy crisp). Add the cornstarch, lemon juice and vanilla to the peaches and stir to combine. Transfer to a 2 quart baking dish.
While the peaches are macerating prepare the streusel. Add oats, brown sugar, flour, pecans, cinnamon and salt to a bowl and stir combine. Add the softened cubed butter and mix in with a pastry blender, knife or your hands until the streusel has a crumbly texture. Sprinkle streusel over the peaches. Transfer the crisp to the oven and bake for 30-35 minutes, or until the filling is bubbly and the streusel is golden. Remove from the oven and allow to cool at least 15 minutes before serving.

Peach Crisp with Pecan Streusel
Ingredients
- 6 large peaches sliced
- 2 tbsp white sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1/2 tsp vanilla extract
For the Pecan Streusel
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup pecans chopped
- 1/2 cup all purpose flour
- 1 tsp cinnamon
- 1/2 tsp kosher salt
- 1/2 cup unsalted butter softened and cubed
Instructions
- Preheat your oven to 400 degrees F.
