I first had this Brazilian dessert by way of the Azores. These beautiful Portuguese islands in the middle of the Atlantic Ocean enjoy a mild, subtropical climate well suited for Brazilian fruits like passion fruit and pineapple. After a meal at the best seafood restaurant on the island of Sao Miguel the waitress suggested we finish with the passion fruit mousse. I was hooked after one taste and delighted when I discovered how easy it was to make.

How to Make Passion Fruit Mousse
As spectacular as this dessert looks and tastes passion fruit mousse is insanely easy to make and your blender does most of the work. Frozen passion fruit puree is widely available in most large grocery stores ( I like this brand as it comes frozen in smaller cubes making it easier to measure out and use just the amount you need).
First mix the gelatin and water in a small bowl, heat in the microwave for 30 seconds and set aside. Place the passion fruit puree, condensed milk, heavy cream, lime juice and gelatin mixture in a blender. Blend at medium speed for 5 minutes, this length of time allows the mousse to be aerated resulting in it’s signature light and fluffy texture. Divide the mousse among 6 dishes and set aside.
For the topping add the sugar and pulp from two fresh passion fruit to a small saucepan. Bring to a simmer over medium heat and cook for 1-2 minutes or until thickened. Remove from heat and top each mousse with the passionfruit mixture. Refrigerate mousse for at least 3 hours before serving.
