If you ask me no Thanksgiving menu is complete without a rich gravy served in your favorite gravy boat! This gravy recipe does not use giblets so you can make a batch ahead of time, and if you want a boost in turkey flavor I’ve included an option to stir in pan drippings. Ingredients
- Unsalted butter
- Shallot
- Garlic
- Fresh rosemary
- Fresh thyme
- All purpose flour
- Chicken broth or turkey broth
- Turkey drippings (optional)
- Kosher salt
- Ground black pepper

Cooking Tips
- You can use either homemade or boxed chicken or turkey stock for this gravy recipe
- If you don’t have shallots feel free to substitute 1/2 of a small finely diced onion
- The longer you’re able to cook the roux (aiming for a golden brown color) before adding the liquid the richer your gravy will be
- I like a rustic gravy but you can strain the gravy through a fine-mesh sieve for a silkier texture
How to Make Turkey Gravy
Making homemade gravy is fairly simple and in my opinion makes your turkey dinner complete. Melt the butter in a medium saucepan over medium heat. Add the shallots, garlic, rosemary and thyme and cook for 2-3 minutes or until fragrant. Slowly whisk in the flour to create a roux, whisking constantly to ensure the flour gets fully incorporated. Cook for 1-2 minutes or until the roux is golden brown


Pour in the chicken stock (or turkey stock) and turkey pan drippings (if using) and season with salt and pepper, whisking to ensure the liquid fully combines with the roux (and to minimize lumps). Bring the gravy to a boil, then reduce the heat and simmer for 5 minutes or until the mixture has thickened, stirring occasionally. Serve as desired.
Storage
Store leftover gravy in an airtight container in the refrigerator for up to 3 days.

Instructions
