Breakfast is the most important meal of the day, and it certainly doesn’t hurt if that breakfast happens to be healthy and pretty. Smoothie bowls are a great way to pack your breakfast full of nutritious goodies and with antioxidants from matcha green tea, and the immune boosting power of ginger this one certainly a healthy start to your day. What is Matcha?
Matcha is green tea leaves that have been ground into a fine powder. Matcha green tea is packed with antioxidants and has a moderate level of caffeine. Featuring an intensely vegetal flavor ( I like to describe it as the espresso of green tea) and a bright beautiful green color Matcha a hit with chefs, bakers and baristas. Matcha lattes have become very popular and you’ll increasingly find it featured in desserts, baked goods and breakfast items like these delicious Matcha Pancakes.
You’ve probably figured out that I am a huge fan of smoothies (this low carb berry smoothie is fabulous) and smoothie bowls and I packed a bunch of my favorite things into this one. I was originally inspired by the flavors in this smoothie bowl recipe and ran with it from there. I love the taste and texture of Greek yogurt and always have a container or two in my fridge. With protein and probiotics Greek yogurt is a great base for any smoothie or smoothie bowl. Next up I added two of my favorite fruits, mango for both it’s flavor and smooth texture and a bit of pineapple for sweetness.
Finally I added the stars of this smoothie bowl, the matcha and ginger. The matcha adds a pleasantly bitter taste and a dose of caffeine (about half that of coffee) to power through the morning, and the ginger has a spicy kick that I just can’t get enough of (for another ginger boost take a look at these Ginger and Turmeric Shots). A few minutes in the blender and you’ve got yourself a tasty breakfast (or snack). Top with your favorite crunchies (I like chia seed, cocao nibs and coconut chips, but granola or fruit would also be good) and you’re good to go. Ginger Matcha Smoothie Bowl
Equipment
- Blender
Ingredients
- 1 cup Greek Yogurt
- 1/2 cup diced mango
- 1/2 cup pineapple chunks
- 1/2 tsp matcha powder
- 1/2-1 tbs fresh grated ginger
Instructions
- Place all ingredients in a blender and process at medium to high speed until smooth.
- Transfer to a bowl and add your favorite toppings
