What is Mousse?
Mousse is a creamy, fluffy dessert that can come in a variety of flavors. Mousse consists of a sugar base (in this case chocolate) that whipped egg whites or whipped cream (or both!) are gently folded into to incorporate air bubbles without collapsing them to result in mousse’s signature airy texture.
What Kind of Chocolate Should I Use?
The best part about making chocolate mousse at home is that you can tailor it to your tastes. I personally prefer a bittersweet chocolate (50-60% cocoa) but dark chocolate (70-80% cocoa) or milk chocolate would also be delicious.

- sugar
- espresso powder
- heavy cream
How to Make Chocolate Espresso Mousse
Chocolate espresso mousse is quite easy to make just a few ingredients. There’s no real cooking or baking required but you will use quite a few bowls so just prepared to wash a few dishes after making this. To start things off you will need to melt the chocolate and you have a few ways to go about this. You can simply microwave them in 30 second increments, stirring as needed; or you can melt them in a double boiler (basically a metal bowl placed over a boiling pot of water ensure the bowl does not touch the water). I personally prefer using a double boiler for a little more control but the microwave method works just as well.
Now it’s time to break out all of your mixing bowls. In a medium bowl beat the egg whites into stiff peaks (the egg whites will be white and foamy and hold their shape) using a hand mixer. In a separate bowl beat the whipped cream into stiff peaks.
In yet another large bowl whisk together the egg yolks, sugar and espresso powder. Stir in the melted chocolate to the egg yolk mixture until combined and then gently stir in the whipped cream. Fold in the whipped egg whites and then divide among 6-8 dessert bowls. This mousse is delicious as is or you can top it with fresh whipped cream, shaved chocolate or fresh berries.

Creamy Chocolate Espresso Mousse
Equipment
- electric hand mixer
- 2 medium to large bowls
- dessert bowls
Ingredients
- 1 3/4 cups chocolate chips
- 3 large eggs yolks and whites separated
- 4 tbsp granulated sugar
- 2 tbsp espresso powder
- 1 cup heavy cream
Instructions
- Melt the chocolate chips using a double boiler, or in the microwave in 30 second increments. Set aside.
- In a medium bowl beat the egg whites into stiff peaks. In a separate bowl beat the whipped cream into stiff peaks.
- In a large bowl whisk together the egg yolks, sugar and espresso powder. Stir in the melted chocolate to the egg yolk mixture until combined and then gently stir in the whipped cream. Fold in the whipped egg whites.
- Divide between 6-8 dessert bowls and chill for at least 4 hours. Serve as desired.
