Chocolate chip cookies are a classic for a reason, but that doesn’t mean we can’t make a few tweaks to take them to the next level. Toasty browned butter, a good dose of espresso powder, and a sprinkle of flaky sea salt take chocolate chip cookies from great to divine. When it comes to chocolate chip cookies I’m firmly in the camp of soft and chewy and that’s what you’ll find here. Espresso powder accents both the nutty caramel notes from the brown butter and brown sugar as well as the richness from the chocolate chips. These cookies are a verified hit, with one of my friends proclaiming them “the best cookies I’ve ever had“. For another great chocolate chip cookie check out these chocolate chip pecan cookies!

Why use brown butter in cookies?
Taking the extra step of browning butter before you make cookies is definitely worth it. Browned butter develops a nuttiness and extra depth of caramel flavor that improves nearly any chocolate chip cookie recipe.
How to make brown butter
Making brown butter is quite simple but you do have to pay attention as it only take a few seconds to go from perfect brown butter to hot burned mess. When preparing brown butter it’s best to use a light colored pan so you can best monitor the color of the butter to avoid over cooking it. To make brown butter for this recipe heat unsalted butter in a medium saucepan or skillet while stirring constantly. The butter will begin to darken in color and it’s typical for the butter to foam a bit on top. Cook the butter until it becomes amber in color with a distinct nutty aroma. Remove the pan from heat and transfer to bowl to stop the cooking process. Allow the butter to come to room temperature or chill in the refrigerator.
How to Make Espresso Chocolate Chip Cookies
After you make the brown butter beat it together with both brown and white sugar until creamy. With a hand mixer (this is the best hand mixer I’ve ever had) beat in the eggs, adding in one at a time as well as the vanilla extract. Add the dry ingredients to the butter mixture and mix until just combined. Stir in the chocolate chips. Chill the dough for at least 30 minutes or up to 24 hours.
When you’re ready to bake the cookies preheat the oven to 350 degrees. Line a baking sheet with parchment paper and scoop out dough with a cookie scoop placing cookies at least 2 inches apart. Bake for the cookies for 10 minutes or until the edges have just become golden and the center is still soft.. Sprinkle with flaky sea salt if desired and allow the cookies to fully cool before serving.

I’m saving this recipe for the day I start baking. I’m 67, so that day better hurry up and come. It’s embarrassing. When asked if I could bake cookies for our son’s class, my response was, “I can provide cookies.”
