Heathy, healthy and tasty my Blueberry Lemon Overnight Oats are a delicious and health make-ahead breakfast. Creamy lemon scented oats laced with a ribbon of blueberry puree these oats taste like dessert but have plenty of fiber and protein to energize your morning.

Perfect for meal planning, overnight oats are an easy and healthy breakfast option with endless flavor possibilities. Bircher muesli ( the original overnight oatmeal) was created by Swiss physician Maximilian Bircher-Benner in the early 1900s. Inspired by a meal the doctor had while hiking in the Alps, Bircher-Benner created his recipe (consisting of apple, lemon juice, oats, cream, and honey) in order to encourage his patients to eat more raw fruits and veggies. Today Bircher muesli is a popular breakfast throughout Switzerland, Germany and Austria and beyond.

Ingredients

  • old fashioned oats
  • milk (dairy or non dairy)
  • Greek yogurt (dairy or non dairy)
  • chia seeds
  • lemon zest
  • vanilla extract
  • maple syrup (or honey)
  • fresh blueberries
Blueberry Lemon Overnight Oats

How to Make Blueberry Lemon Overnight Oats

In a large bowl stir together the oats, milk, Greek yogurt, chia seeds, vanilla extract, lemon zest and 1 tbsp of maple syrup ( or honey). In a small food processor add 1 cup blueberries and remaining 1 tbsp maple syrup (or honey). Pulse until well combined. Alternatively you could place the blueberries ina bowl and mash with a potato masher or fork.

Layer the blueberry mxzture and oats between 4 dishes or glass jars. Refrigerate for at least 6 hours or overnight. Top with additional blueberries when serving.
