Blueberry lemon overnight oats are an easy breakfast that is healthy, filling and delicious. Coming together in minutes these blueberry lemon overnight oats are perfect for meal prep.
In a large bowl stir together the oats, milk, Greek yogurt, chia seeds, lemon zest, vanilla extract and 1 tbsp of maple syrup ( or honey).
In a small food processor add 1 cup blueberries and remaining 1 tbsp maple syrup (or honey). Pulse until well combined. Althernatively you could place the blueberries ina bowl and mash with a potato masher or fork.
Layer the blueberry mxzture and oats between 4 dishes or glass jars. Refrigerate for at least 6 hours or overnight. Top with additional blueberries when serving.
