Blueberry Lemon Overnight Oats

Equipment

  • 2 mixing bowls
  • 4 glass jars or bowls

Ingredients
  

  • 1 cup old fahioned oats
  • 1 cup milk
  • 1 cup Greek yogurt
  • 1 tbsp chia seeds
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup or honey divided
  • 1 cup fresh blueberries plus more for serving

Instructions
 

  • In a large bowl stir together the oats, milk, Greek yogurt, chia seeds, lemon zest, vanilla extract and 1 tbsp of maple syrup ( or honey).
  • In a small food processor add 1 cup blueberries and remaining 1 tbsp maple syrup (or honey). Pulse until well combined. Althernatively you could place the blueberries ina bowl and mash with a potato masher or fork.
  • Layer the blueberry mxzture and oats between 4 dishes or glass jars. Refrigerate for at least 6 hours or overnight. Top with additional blueberries when serving.
