Sweet Potato Breakfast Hash

Hash is one of my go-to meals. Loaded with crispy sweet potatoes and filled with veggies hash is the ultimate quick meal. Perfect as a filling breakfast or easy dinner this Sweet Potato Breakfast Hash is healthy, hearty, and comes together in a snap.

Sweet Potato Breakfast Hash

By its nature hash is a versatile dish and you can use just about any potato you have on hand, including sweet potatoes. While it’s easy enough to peel (I love this vegetable peel) and slice whole sweet potatoes feel free to make things a little easier with pre-diced sweet potato from the produce section at the supermarket.

Ingredients for Sweet Potato Breakfast Hash

  • olive oil 
  • diced sweet potato
  • kosher salt 
  • black pepper 
  • onion
  • bell pepper, seeded and diced
  • ground cumin
  • smoked paprika
  • garlic powder
  • baby spinach
  • large eggs
Sweet Potato Breakfast Hash

How to Make Sweet Potato Breakfast Hash

In a large bowl add diced sweet potato, 1 tbsp of olive oil, salt and pepper and toss to combine. Set aside. Heat the remaining olive oil to a large skillet over medium heat. Add in the diced onion, bell pepper, cumin, smoked paprika and garlic powder. Cook for 4-5 minutes, stirring occasionally, until the vegetables are soft and fragrant. Add the diced sweet potato to the skillet and spread out into an even layer. Cook for 15 minutes stirring occasionally.

Sweet Potato Breakfast Hash - Ingredients

Scatter baby spinach over the top of the sweet potatoes. Make 4 wells in the sweet potato mixture and crack an egg into each well and sprinkle with additional salt and pepper. Cover the pan and cook for an additional 7-10 minutes or until eggs reach your desired level of doneness. Serve as desired.

Ingredients

  • 1/2 tsp kosher salt plus more to taste
  • 1/2 tsp black pepper plus more to taste
  • 1 large onion, diced
  • 1 large bell pepper, seeded and diced
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 cup baby spinach
  • 4 large eggs
