4cupssweet potato, dicedabout 2-3 medium sweet potatoes
1/2tspkosher saltplus more to taste
1/2tspblack pepperplus more to taste
1largeonion, diced
1largebell pepper, seeded and diced
1/2tspground cumin
1/2tspsmoked paprika
1/2tspgarlic powder
1cupbaby spinach
4large eggs
Instructions
In a large bowl add diced sweet potato, 1 tbsp of olive oil, salt and pepper and toss to combine. Set aside.
Add remaining olive oil to a large skillet over medium high heat. Add diced onion, bell pepper, cumin, smoked paprika and garlic powder. Cook for 4-5 minutes, stirring occasionally, until the vegetables are soft and fragrant.
Add the diced sweet potato to the skillet and spread out into an even layer. Cook for 15 minutes stirring occasionally.
Scatter baby spinach over the top of the sweet potatoes. Make 4 wells in the sweet potato mixture and crack an egg into each well and sprinkle with additional salt and pepper. Cover the pan and cook for an additional 7-10 minutes or until eggs reach your desired level of doneness. Serve as desired.
