Ingredients
  

  • 2 tbsp olive oil divided
  • 4 cups sweet potato, diced about 2-3 medium sweet potatoes
  • 1/2 tsp kosher salt plus more to taste
  • 1/2 tsp black pepper plus more to taste
  • 1 large onion, diced
  • 1 large bell pepper, seeded and diced
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 cup baby spinach
  • 4 large eggs

Instructions
 

  • In a large bowl add diced sweet potato, 1 tbsp of olive oil, salt and pepper and toss to combine. Set aside.
  • Add remaining olive oil to a large skillet over medium high heat. Add diced onion, bell pepper, cumin, smoked paprika and garlic powder. Cook for 4-5 minutes, stirring occasionally, until the vegetables are soft and fragrant.
  • Add the diced sweet potato to the skillet and spread out into an even layer. Cook for 15 minutes stirring occasionally.
  • Scatter baby spinach over the top of the sweet potatoes. Make 4 wells in the sweet potato mixture and crack an egg into each well and sprinkle with additional salt and pepper. Cover the pan and cook for an additional 7-10 minutes or until eggs reach your desired level of doneness. Serve as desired.
