When it’s cold outside nothing hits the spot like a cozy bowl of soup, especially if it just happens to be broccoli cheddar soup. What if this homemade soup is healthy and ready in 20 minutes? Now we’re talking. My Healthy Instant Pot Broccoli Cheese Soup is velvety, loaded with veggies and incredibly easy to make.

Most broccoli cheese soups are more like cheese sauce with a few florets of broccoli tossed in, and while delicious, can be a bit on the heavy side. Broccoli is the star of this soup with a handful of shredded sharp cheddar for a hit of flavor. Instead of flour and milk I like to use cannellini beans, which when pureed with the other veggies results in a smooth creamy texture. This broccoli cheese soup is gluten free and easily made vegetarian if you use vegetable broth. For another great Instant Pot soup try this One Pot Zuppa Toscana!

Ingredients for Instant Pot Broccoli Cheddar Soup

  • olive oil
  • onion
  • celery
  • carrots
  • broccoli (fresh or frozen)
  • chicken or vegetable broth
  • cannellini beans
  • shredded sharp cheddar cheese
  • salt
  • pepper

How to Make Instant Pot Broccoli Cheddar Soup

Instant Pot Broccoli Cheddar Soup - shredded cheddar

This soup is loaded with veggies, is easy to make and comes together in a snap. Start by heating the olive oil in the Instant Pot on โ€˜Sauteโ€™ setting. Add onion, carrots and celery and cook for 3-4 minutes until onions are translucent. Add cannellini beans, half of the broccoli florets and broth. Seal the lid, select ‘Manual’ setting and High Pressure, then set cook time for 1 minutes. Once the soup is done cooking perform a quick release per manufacturer’s instructions.

Use an immersion blender (this immersion blender is lightweight and powerful) to puree the soup until smooth.  (Or you can puree the soup in a traditional blender in 2-3 batches, taking care when working with the hot liquid. Return the pureed soup to the Instant Pot). Stir in the shredded cheddar and remaining broccoli and cook until the cheese has melted and broccoli has warmed through. Divide into 4-6 bowls and serve as desired.

Ingredients
  

  • 1 tbsp olive oil
  • 1 large onion, diced
  • 1 cup shredded carrots about 2 large carrots
  • 2 stalks celery, chopped
  • 1 15 oz can cannellini beans
  • 1 pound broccoli florets about 4-5 cups divided
  • 4 cups vegetable or chicken broth
  • 2 cups shredded cheddar cheese
  • 1 tsp kosher salt or to taste
  • 1 tsp black pepper or to taste
