This Apple Cinnamon Baked Oatmeal is an easy, cozy breakfast perfect for fall. Everything comes together in one bowl before baking until golden and set, making this a simple breakfast for busy mornings, lazy weekends or meal prep. There’s something about the apple cinnamon combo that makes breakfast feel a little more special. This baked oatmeal recipe has all those classic fall flavors you love in an easy-to-make breakfast that doesn’t require much hands-on time. This baked apple oatmeal recipe has a soft, tender center with lightly crisp edges and a golden top. The apples add natural sweetness and little pockets of juicy flavor throughout, while pecans give each bite a bit of crunch. And the best part? You can prepare everything in one bowl and have breakfast ready for the week. It’s a great make-ahead option for busy mornings and can be enjoyed warm or cold.   • Milk (dairy or non-dairy)
  • Brown sugar
  • Large eggs
  • Ground cinnamon
  • Old fashioned oats
  • Baking powder
  • Kosher salt
  • Apples
  • Pecans

Cooking Tips and Variations

  • Use old fashioned oats. Rolled oats give this baked oatmeal the best texture. I don’t recommend substituting quick oats or steel-cut oats for this recipe.
  • Choose your favorite apples. Honeycrisp, Fuji, Gala, Pink Lady and Granny Smith all work well here.
  • Don’t skip the cooling time. Letting the oatmeal rest for at least 10 minutes after baking helps it set up before serving.
  • Make it dairy-free. Use your favorite non-dairy milk such as almond milk, oat milk or soy milk.
  • Add more warm spices. Add a dash of nutmeg, ground ginger or a splash of vanilla extract for even more flavor.
  • Switch up the nuts. Walnuts and almonds are an easy substitute for pecans, or leave the nuts out if you prefer.
  • Make it sweeter. If you prefer a sweeter breakfast, drizzle individual servings with pure maple syrup or honey. 
  • Add dried fruit. Raisins, dried cranberries or chopped dates make delicious additions.
  • Turn it into meal prep. Bake on the weekend, portion into individual servings and refrigerate for easy breakfasts throughout the week.

How to Make Apple Cinnamon Baked Oatmeal

Preheat oven to 350 degrees F. In a large bowl whisk together the milk, eggs, brown sugar and cinnamon until fully combined. Stir in the dry ingredients including oats, baking powder and salt ensuring the oats are incorporated into the liquid mixture. Stir in the diced apple.

Pour the oatmeal mixture into an 8×8 inch baking dish prepared with onstick ncooking spray. Transfer to the oven and bake for 40 minutes or until the center is set and the oatmeal is golden on top. Allow to cool for at least 10 minutes before slicing and serving. Serve with a dollop of greek yogurt or whipped cream, or a drizzle of maple syrup or honey.

Storage and Reheating

Store cooled the cooled apple baked oatmeal in an airtight container in the refrigerator for up to 4 days.

Reheat individual portions in the microwave until warmed through. If the oatmeal has become dry add a splash of milk before reheating.

To freeze this baked oatmeal wrap individual portions with plastic wrap and place them in a freezer-safe  bag orcontainer. Thaw overnight in the refrigerator and reheat before serving.
