With it’s herbal sweetness Rosemary Simple Syrup is one of my favorite simple syrups to make and elevates up everything from my morning cup of coffee to some of my favorite cocktails. Using just three ingredients discover just how easy making my rosemary simple syrup recipe can be.

What is simple syrup?
Simple syrup is a mixture sugar dissolved in water and making your own simple syrup is quite easy. Traditional simple syrup is an equal 1:1 ratio or equal parts water and sugar. Thin simple syrup is less sweet with a less viscous texture with a 2:1 ratio of water to sugar. Thick simple syrup is 2 parts sugar to 1 part water with a sweeter flavor. You can use use a variety of sugars to change the dynamics of your simple syrup. Standard granulated white sugar makes a good standard simple syrup but you can also use demerara, honey or coconut sugar depending on your preferences. You can make a variety of flavors including Cinnamon Simple Syrup,Vanilla Simple Syrup, Cranberry Simple Syrup, Honey Ginger Simple Syrup and Lavender Simple Syrup.
Ingredients
- granulated sugar
- water
- fresh rosemary sprigs
Cooking Tips
- Substitute honey or demerara sugar for the granulated sugar for a richer flavor
- Use 2-3 teaspoons of dried rosemary if you don’t have fresh rosemary on hand
- For a thicker syrup use 2 parts sweetener to 1 part water
- Use this to create delicious rosemary cocktails with gin, vodka or bourbon

How to use Rosemary Simple Syrup
You can use this rosemary syrup anywhere you’d like to add a bit of herbal sweetness. Add this homemade rosemary syrup to cold drinks like a rosemary lemonade or iced tea, or make a cafe-style hot or iced coffee drink or hot tea at home. You can also use this syrup to add rosemary flavor to a number of delicious cocktails or mocktails (it would be a delicious addition to my Cranberry Gin Fizz, Apple Cider Mimosa or Cranberry Old Fashioned). I also like to drizzle rosemary syrup over lemon or vanilla cake layers or pound cake.
How to Make Rosemary Simple Syrup
With just a few simple ingredients simple syrup is quite easy to make and you can make your own unique flavors. In a small saucepan combine sugar, water and sprigs of fresh rosemary and bring to a simmer over medium heat until the sugar dissolves. Remove the pan from the heat and cover, letting the simple syrup steep for at 20 minutes or up to an hour. Strain out the rosemary with a mesh strainer and transfer the cooled syrup to a clean glass jar (I absolutely love these adorable tulip jars or you can use a mason jar). Serve as desired.
Storage
Rosemary simple syrup can be stored in an airtight container at room temperature for 1 week or in the refrigerator for up to a month.

Equipment
- 1 small saucepan
- 1 mesh strainer
- glass jar
Ingredients
- 1 cup granulated sugar
- 1 cup water
- 5 sprigs fresh rosemary
Instructions
- Combine water, sugar and rosemary in a medium saucepan and bring to a simmer until sugar is fully dissolved.
- Remove the pan from the heat, allow to steep for at least 20 minutes or up to an hour.
- Strain out the rosemary and pour into clean glass jar. Serve as desired.
