Ingredients
  

  • 1 tbsp olive oil or coconut oil
  • 1/2 tsp ground cumin
  • 1 pound ground chicken
  • 1 cup salsa verde
  • 1/2 cup Greek yogurt or sour cream
  • 2 15 oz cans cannellini beans drained and rinsed
  • salt and pepper to taste

Instructions
 

  • 1. Heat oil in a large pot over medium heat, add cumin and cook 1 minute or until fragrant. Add ground chicken and cook 5-6 minutes or until browned.
  • Add salsa verde, Greek yogurt, cannellini beans, salt and pepper and stir to combine. Bring to a simmer and cook for 10 minutes. Ladle into bowls and top as desired.

Notes

Salsa verde is typically mild, if you want a bit of spice try adding a few dashes of hot sauce.
