Pimento Cheese Deviled Eggs

Ingredients
  

  • 12 hard boiled eggs halved
  • 1 cup sharp cheddar cheese finely shredded
  • 1/2 cup mayonnaise
  • 1 4oz jar diced pimentos
  • 1 tbsp dijon mustard
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • chopped dill or chives for garnish

Instructions
 

  • Slice the hard boiled eggs in half, remove the yolks and place in the bowl of a food processor (altenatively you can place the egg yolks in a large bowl and use a hand mixer to make the filling).
  • Add in the grated cheddar cheese, mayonnaise, dijon mustard, salt, pepper,garlic powder and smoked paprika. Mix together (with either a food prcoessor or hand mixer) until smooth. Pour in the pimentos with their juice and pulse until just combined.
  • Using a piping bag or a spoon fill each egg white half with the yolk mixture. Garnish with chopped dill and chives and serve as desired.
