Peanut Butter Banana Bread

Ingredients
  

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 2 large bananas, mashed approximately 1 cup mashed
  • 2/3 cup brown sugar
  • 1/2 cup peanut butter
  • 1/2 cup Greek yogurt
  • 1/3 cup unsalted butter melted
  • 2 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 325 degrees and prepare a loaf pan with cooking spray then line with parchment paper.
  • In a mixing bowl whisk together flour, baking soda and salt.
  • In another mixing bowl whisk together mashed bananas, brown sugar, Greek yogurt, peanut butter, eggs, melted butter and vanilla. Stir in flour mixture until just combined.
  • Transfer the batter to the prepared loaf pan. Using a butter knife create a shallow line down the middle of the batter lengthwise leaving a 1 inch space on either end.
  • Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for at least 10 minutes before removing the banana bread from the pan and slicing. Serve as desired.
