Add Aperol, gin, lemon juice, simple syrup and egg white to a cocktail shaker. Shake for 20-30 seconds without ice (this is known as a dry shake and forms the foamy top layer of the drink.
Add ice to the cocktail shaker and shake for 15 seconds or until chilled. Strain into a chilled cocktail glass with a hawthorne strainer and serve.
