Add water to a medium saucepan and bring to a boil over medium high heat. Add peas and cook for 3 minutes. Drain peas and transfer to an ice bath to stop the cooking.
In a small bowl whisk together lemon juice, olive oil, dijon mustard, salt and pepper.
Transfer the peas to a large bowl and add the dressing, mint and crumbled feta and stir to combine. Sprinkle with sunflower seeds and serve as desired.
