  • 1 large bowl

Ingredients
  

  • 2 cups peas fresh or frozen
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp dijon mustard
  • kosher salt
  • black pepper
  • 2 tbsp fresh mint, chopped
  • 1/4 cup crumbled feta cheese
  • 2 tbsp sunflower seeds

Instructions
 

  • Add water to a medium saucepan and bring to a boil over medium high heat. Add peas and cook for 3 minutes. Drain peas and transfer to an ice bath to stop the cooking.
  • In a small bowl whisk together lemon juice, olive oil, dijon mustard, salt and pepper.
  • Transfer the peas to a large bowl and add the dressing, mint and crumbled feta and stir to combine. Sprinkle with sunflower seeds and serve as desired.
