1 large chef's knife
- 2 medium delicata squash
- 1 tbsp olive oil
- kosher salt to taste
- black pepper to taste
Preheat oven to 375 degrees.
Cut the delicata squash in half lengthwise and scoop out the seeds. Slice into half moons about 1-1.5 inches wide.
Place the delicata squash slices on a baking sheet, toss with olive oil then sprinkle each side with salt and pepper.
Bake for 30-35 minutes or until soft and slightly golden. Serve as desired.
