Brush olive oil in each compartment of the muffin tin. Place one slice of prosciutto inside each compartment, pressing to make sure the sides and bottom are fully lined (you may need to tear the prosciutto into several pieces to more easily get a cup shape).
Place 2-3 baby spinach leaves inside each cup and top with an egg. Sprinkle with salt and pepper to taste.
Bake for 12 minutes for an egg yolk that is slightly jammy, or up to 15 minutes for a harder set yolk.
