There’s no denying it, summer is in full swing. Hot, hazy days spent on the beach or lounging poolside as a respite from the summer sun; it’s these days that have me longing for a frozen treat. Ever since my days as a kid spent chasing after the neighborhood ice cream truck I’ve always loved popsicles. Cool and refreshing on a hot afternoon popsicles are the perfect icy treat and loved by kids and adults alike. With four simple ingredients and no added sugar these mango coconut popsicles are a healthy tropical treat you’ll feel good about reaching for all summer long.

Mango Coconut Popsicle

Popsicles are an easy treat to make and the flavor combinations are endless. During these long, languid summer days I absolutely love tropical flavors. I mean, is there anything more refreshing than creamy mango and coconut? These fruits immediately immediately bring to mind powder soft white sand beaches, bright blue water and palm trees swaying in the breeze.

Like I mentioned before these mango coconut couldn’t be easier to make. Mango is one of my favorite fruits to use not just for desserts, but also for smoothies and smoothie bowls ( like this Ginger Match Smoothie Bowl). Mango not only brings a brightness to any dessert but also a smooth texture when blended. Pineapple is a great way to add sweetness without adding refined sugar and a lime zest adds a pop of citrus.Coconut milk is rich, creamy and makes these popsicles downright decadent. Throw everything in the blender, puree it until smooth and creamy and pour this mixture into some popsicle molds. Freeze for a few hours and you’ve got your new favorite summertime treat.

Mango Coconut Popsicles

Equipment

  • Blender
  • Popsicle molds

Ingredients
  

  • 2 cups frozen mango
  • 3/4 cup pineapple chunks
  • 3/4 cup coconut milk
  • 1 tsp lime zest

Instructions
 

  • Add all of the ingredients to the blender and puree until smooth.
  • Divide the mango mixture between 6 popsicle molds. Freeze for at least 3 hours or until solid.
